1 scoop Bethany's Pantry Vanilla Digestive Support Protein (essential for structure - this acts as our low-carb flour substitute!)

1/2 cup natural almond butter
Caramel Layer

10 Medjool dates, pitted

1 Tbsp toasted coconut butter

1 tsp sea salt
Chocolate Coating

100% organic dark chocolate (no added sugar)
Directions
Prep the dates: Submerge pitted dates in hot water to soften while you prepare the cookie layer.
Make cookie base: Mix gelatin, Bethany's Pantry Vanilla DSP, and almond butter in a small bowl until combined. Press mixture into a small rectangular glass dish lined with parchment paper.
Bake: Bake at 350°F for 15 minutes until set.
Cool completely: Place baked cookie layer in fridge or freezer to cool and harden - this step is crucial for the right texture!
Make caramel: Drain soaked dates and blend with coconut butter and sea salt until smooth and creamy. (Tip: smaller blenders work best for this!)
Assemble: Remove cookie layer from fridge and spread caramel evenly on top. Return to freezer while you melt the chocolate.
Final step: Remove from freezer, slice into desired bar shapes, then dip each piece in melted chocolate.
Store: Keep your healthy Twix bars in the fridge or freezer for best texture.

The Vanilla DSP is key for the perfect cookie texture - it creates that authentic Twix crunch! Make sure your cookie layer is completely cool before adding caramel For easier slicing, run your knife under warm water between cuts These taste even better after sitting overnight in the fridge
