½ cup blanched almond meal (or sunflower seed flour for nut-free option)

2 scoops Bethany's Pantry Vanilla Digestive Support Protein (flour substitute and gives bulk - no substitutions work!)

1 teaspoon ground cinnamon

1 tablespoon honey or pure maple syrup

2 tablespoons coconut oil (melted)

1-3 tablespoons filtered water (as needed for consistency)

Directions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
In a medium bowl, combine the almond meal (or sunflower seed flour), Bethany's Pantry Vanilla DSP, and cinnamon. Mix well to distribute evenly.
Add the honey (or maple syrup), melted coconut oil, and 1 tablespoon of water to the dry ingredients. Mix until a dough forms. If the batter is crumbly, add 1 more tablespoon of water and mix well. The dough should hold together when pressed.
Using your hands, compress the dough into one large, compact ball.
Place the dough ball on your prepared baking sheet and cover with another sheet of parchment paper.
Using a rolling pin, roll the dough as thin as possible without breaking (about ⅛ inch thick). The thinner you roll it, the crispier your squares will be!
Remove the top parchment paper and use a pizza cutter or sharp knife to cut the rolled dough into evenly-sized squares (about 1-inch squares work well).
Bake for 4-5 minutes, watching carefully as they can turn from golden to burnt very quickly!
Remove from oven and let cool for at least 10 minutes - this cooling time is crucial for achieving maximum crispiness! (If you can wait that long!)
Optional: While still slightly warm, lightly spray squares with coconut oil and dust with coconut sugar or date sugar for extra sweetness.

Essential Ingredient: Bethany's Pantry Vanilla DSP is crucial as a flour substitute and for giving the batter proper bulk. Other protein powders will not work the same way and won't create the right texture!
Rolling Tip: The thinner you can roll the dough without breaking it, the crispier your final squares will be. Aim for about ⅛ inch thickness.
