Ingredients

3 whole eggs (or flax eggs for vegan option)

1 tsp aluminum-free baking soda

⅓ cup red cocoa powder

2 scoops Bethany’s Pantry Digestive Support Protein – Cocoa

Optional: chocolate chips to taste

Optional: ½ cup coconut sugar (will remove keto/low-carb/diabetic-friendly benefits)
Directions
Preheat oven to 350°F (175°C).
In a mixing bowl, whisk eggs, baking soda, cocoa powder, and Digestive Support Protein – Cocoa until smooth.
Fold in chocolate chips if using.
Lightly grease 4 muffin tins and divide batter evenly.
Bake 15–17 minutes, until set in the center.
Cool 5–10 minutes before removing from tins.
Recipe Note
Vegan option: Substitute flax eggs (1 egg = 1 Tbsp flax + 3 Tbsp water).
Sweetness: For true low-carb/keto muffins, skip coconut sugar and use a keto sweetener if needed.
