Ingredients

1 cup Santa Barbara Chocolate unsweetened chocolate chips

2 scoops Bethany's Pantry Digestive Support Protein (Vanilla or Cacao) (this is the secret to thick, non-runny filling - a MUST!)

2 scoops Evo Hemp CBD Crystals (optional)

2 tablespoons organic sunflower seed butter (single ingredient only)

2-3 tablespoons filtered water

12 mini cupcake liners
Directions
Line a mini muffin tin with 12 cupcake liners. Place about 1 tablespoon of chocolate chips at the bottom of each liner and set aside.
In a medium mixing bowl, combine the protein powder and CBD crystals (if using). Mix well to combine.
Add the sunflower seed butter to the powder mixture and mix until it becomes crumbly and well distributed.
Add 2 tablespoons of water and mix thoroughly. The mixture should start to come together. If it's still too dry, add the remaining tablespoon of water gradually until you achieve a "play dough" texture that holds together when pressed.
Roll the mixture into 12 small "coins" or flatten small portions between your palms. Place one piece into each prepared cupcake liner on top of the chocolate chips.
Top each cup with additional chocolate chips, making sure the protein mixture is completely covered with chocolate.
Working in batches of 3, place the cups on a microwave-safe plate and microwave for 1 minute. If the chocolate isn't fully melted, continue microwaving in 30-second intervals until smooth.
Immediately transfer to the freezer for 5-10 minutes, or until the chocolate has completely hardened.
Remove from liners and enjoy immediately, or store in the refrigerator for up to 1 week.
