Ingredients

    • 1/2 cup rich cacao powder

    • 4 scoops Bethany’s Pantry Cocoa Digestive Support Protein (no substitutions — this acts as a flour replacement)

    • 1 teaspoon cinnamon

    • 4 tablespoons coconut oil, melted

    • 8 tablespoons water

    • Coconut butter (at room temperature)

    Directions

    1. Preheat your oven to 350°F (175°C).

    2. In a medium bowl, mix together the cacao powder, Digestive Support Protein (DSP), and cinnamon.

    3. Add the melted coconut oil and water, and mix until a dough forms.

    4. Use your hands to form the dough into one large ball.

    5. Place the dough between two sheets of parchment paper and roll it out evenly with a rolling pin.

    6. Cut out circles using a cookie cutter or small glass.

    7. Place the cookie circles onto a lined baking sheetand bake for 8 minutes at 350°F.

    8. Allow the cookies to cool completely on the baking sheet (very important — they are delicate when warm).

    9. Once cooled, transfer the cookies to the freezer until they are cold and firm (this helps with assembly).

    10. Remove from freezer, and place a dollop of room-temperature coconut butter onto the center of one cookie.

    11. Sandwich with a second cookie and repeat until all cookies are assembled.
