These Cookie Dough Ice Cream Bars are the ultimate clean treat—just 3 simple ingredients and a whole lot of gut-friendly goodness. They’re Keto, Low Carb, Paleo, Vegan-Friendly, Diabetic-Friendly, Nut-Free, Grain & Gluten-Free, and made with Bethany’s Pantry Digestive Support Protein – Vanilla for an extra boost of protein and probiotics.
Unlike many protein powders, ours thickens beautifully to create that real cookie dough texture. You won’t believe these bars are made without flour, refined sugar, or fillers.
Ingredients

5 oz Greek yogurt (use unsweetened dairy-free yogurt if needed)

½ cup Bethany’s Pantry Digestive Support Protein – Vanilla

¼ cup water

2–3 Tbsp dark chocolate chunks or chips (dairy-free if needed)
Directions
In a bowl, mix Greek yogurt, Digestive Support Protein – Vanilla, and water until thick and smooth.
Fold in chocolate chunks to create your cookie dough base.
Press the dough into silicone ice cream bar molds. Freeze until solid.
Once firm, melt extra chocolate chips and coat each bar. The chocolate will harden quickly.
Enjoy your high-protein cookie dough bars straight from the freezer!
Recipe Note
For a vegan version, use unsweetened coconut or almond yogurt instead of Greek yogurt.
Any dairy-free chocolate works for the coating—choose sugar-free chocolate if following keto.
Our Digestive Support Protein – Vanilla thickens uniquely for cookie dough texture. Other protein powders may not set correctly.
Store bars in the freezer and let them sit at room temperature for 2–3 minutes before eating for best texture.
