1½ cups plain Greek yogurt (high protein variety preferred)

½ cup organic raw cacao powder

½ cup Bethany's Pantry Digestive Support Protein (any flavor, but cocoa recommended)

2-3 oz unsweetened chocolate for coating (optional but recommended)
Directions
In a large mixing bowl, combine the Greek yogurt, cacao powder, and Bethany's Pantry Digestive Support Protein. Mix thoroughly until the texture resembles a thick, moldable dough that holds together well.
Line an 8x4 inch glass dish with parchment paper. Press the protein dough firmly and evenly into the dish, creating a smooth, compact rectangle.
Carefully remove the formed dough from the dish using the parchment paper. Place on a cutting board and cut into either 4 large bars or 8 smaller bites, depending on your preferred serving size.
If using chocolate coating: Melt the unsweetened chocolate in a microwave-safe bowl in 30-second intervals, stirring between each interval until smooth.
Dip each protein bite into the melted chocolate to coat completely, or drizzle the chocolate over each piece for a lighter coating. Place coated bites on a parchment-lined plate.
Refrigerate for 15 minutes or until the chocolate has completely hardened and the bites are firm.
