This 2-Ingredient Cookie Dough Ice Cream comes together in about 5 minutes and proves that eating well doesn’t need to be complicated or boring. It’s thick, creamy, and tastes like cookie dough - with 65 grams of protein in the full batch.
Made with Bethany’s Pantry Digestive Support Protein – Vanilla, this recipe relies on the unique thickening properties of this protein. Whey, collagen, beef, or bone broth proteins will not create the same texture.
Ingredients

1 cup 0% Greek yogurt
½ cup Bethany’s Pantry Digestive Support Protein – Vanilla

Unsweetened chocolate (or chocolate of choice)
Coconut oil, optional (to help with melting)
Directions
In a bowl, mix Greek yogurt and Digestive Support Protein – Vanilla until a thick, cookie-dough-like batter forms.
Scoop mixture into balls using a cookie scoop and place on a plate.
Freeze scoops while melting the chocolate.
Once chocolate is melted, remove the plate from the freezer and drizzle or pour chocolate over the chilled cookie dough bites.
Allow chocolate to set, then enjoy immediately or store in the freezer.
