3-Ingredient Fudgy Pear Brownies
Three ingredients. No flour. No eggs. No oil. No added sugar. And genuinely some of the fudgiest brownies I make.
The whole thing starts with pears. You blend them into a puree, add my Cocoa Digestive Support Protein and red cacao powder, and that is the batter. The pears do the work of the eggs, the oil, and the sugar all at once, and they bring fiber along with them.
Why Pears Work So Well in Brownies
Pears are one of the most underrated fruits for baking. They are naturally sweet enough to carry a dessert without any added sugar, they have a very high water content which keeps baked goods moist, and their flavor is mild enough to disappear completely behind cocoa.
You will not taste pear in these brownies. What you get is the moisture and natural sweetness they bring, plus the fiber that comes with eating whole fruit rather than juice or syrup.
How 3 Ingredients Make a Brownie
• Pureed pears replace the eggs, oil, and sugar. They provide moisture, binding, natural sweetness, and fiber. Using the whole fruit (rather than juice) means you keep all of that fiber.
• Cocoa Digestive Support Protein replaces the flour. It is a pea protein isolate milled fine enough to behave like flour in baking, absorbing the moisture from the pear puree and giving the brownies their structure. It also adds plant protein and contains Bacillus coagulans, a probiotic that supports healthy digestion.
• Red cacao powder brings the deep chocolate flavor. Regular cacao works, but red cacao tastes noticeably richer and less bitter, which matters a lot in a recipe with no added sugar.
Tips for the Best Pear Brownies
• Use ripe pears. Riper pears are sweeter and blend into a smoother puree. Firm, underripe pears will give you a less sweet brownie and a grainier texture.
• Blend the puree until completely smooth before adding the dry ingredients. Any chunks of pear will stay as chunks in the finished brownie.
• Cool completely before slicing. This is the step people skip. These brownies are soft when warm and firm up substantially as they cool. Cutting early gives you crumbly, falling-apart edges.
• Red cacao is worth seeking out. In a sugar-free recipe the cocoa has to carry the entire flavor, and red cacao is deeper and smoother than standard cocoa powder.
• Frost only after the brownies are fully cool. A warm brownie will melt the yogurt frosting straight off the top.
About the Frosting
The frosting is optional but it turns these from a simple snack brownie into something that feels like a proper dessert. It is Greek yogurt mixed with sunflower seed butter and a scoop of Vanilla DSP, which thickens it into a spreadable, creamy layer and adds a little more protein.
For a fully vegan and dairy-free version, swap the Greek yogurt for a thick coconut yogurt. The frosting will be slightly softer but tastes just as good.
Storage
Store unfrosted brownies in an airtight container in the fridge for up to 5 days. Frosted brownies should also be refrigerated and are best within 3 to 4 days. Unfrosted brownies freeze well for up to 2 months. Wrap individually and thaw at room temperature or in the fridge.
Dietary Information
These brownies are vegan, paleo, gluten-free, grain-free, dairy-free, egg-free, nut-free, soy-free, and free from added sugar. All sweetness comes naturally from the pears. Both the Cocoa DSP and Vanilla DSP are free from all nine major allergens and contain Bacillus coagulans, a probiotic that supports healthy digestion. With the Greek yogurt frosting, the brownies are no longer vegan or dairy-free; use coconut yogurt to keep them fully plant-based.
Ingredients
3 small pears, about 1 1/2 cups pureed
3 scoops Bethany's Pantry Cocoa Digestive Support Protein
3/4 cup red cacao powder, (regular cacao powder works, but red cacao tastes noticeably richer)
blank
1 cup Greek yogurt, (or coconut yogurt for dairy-free and vegan)
2 tablespoons organic sunflower seed butter
1 scoop Bethany's Pantry Vanilla Digestive Support Protein
Directions
Preheat your oven to 350°F (175°C). Oil a glass baking dish.
Wash and slice the pears, then puree them in a blender until smooth. You should have about 1 1/2 cups of puree.
Add the Cocoa Digestive Support Protein and red cacao powder to the blender with the pear puree. Blend until a thick, smooth batter forms.
Transfer the batter into the oiled glass dish and spread evenly.
Bake for about 40 minutes.
Allow to cool completely before frosting or slicing. The brownies firm up considerably as they cool, and cutting them warm will leave you with crumbly edges.
In a bowl, mix the Greek yogurt, sunflower seed butter, and 1 scoop of Vanilla Digestive Support Protein until smooth and thick.
Spread over the fully cooled brownies. Store frosted brownies in the refrigerator.
