These 3-Ingredient Vegan Cookies are soft, naturally sweet, and made without eggs, dairy, gluten, grains, or added sugar. They’re sweetened only with banana and powered by Bethany’s Pantry Protein Bake, a zero-carb, high-protein flour alternative that gives these cookies structure and substance.
Simple ingredients, minimal effort, and a cookie you can feel good about enjoying any time of day.
Ingredients

1 medium ripe banana

½ cup organic SunButter (sunflower seed butter, nut-free)

½ cup Bethany’s Pantry Protein Bake (zero-carb baking flour alternative)

Optional: chocolate chips
Directions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mash the banana in a bowl until smooth.
Stir in SunButter until fully combined.
Add Protein Bake and mix well until a thick cookie dough forms.
Scoop dough onto the lined baking sheet and gently flatten.
Press chocolate chips on top if using.
Bake for 10–12 minutes.
Allow cookies to cool completely before removing from the pan (they firm up as they cool).
