This Giant Double Chocolate Chip Cookie for One is rich, fudgy, and deeply chocolatey — with 24 grams of protein, no added sugar, and no grains or gluten. It’s the perfect single-serve dessert when you want something indulgent without baking a full batch.
Made with Bethany’s Pantry Cacao Digestive Support Protein, this recipe uses a low-carb flour alternative that creates structure and chew without traditional flour. Other protein powders will not produce the same result.
Husband approved. Seriously.

Recipe Note
Protein matters: This recipe only works properly with Bethany’s Pantry Digestive Support Protein, which acts as a flour replacement. Whey, collagen, or beef protein will not create the same texture.
Vegan option: Use a flax egg (1 Tbsp ground flax + 2.5 Tbsp water, let sit 5 minutes).
Texture tip: Slightly underbake for a softer center.
Customization: Add sea salt on top for a sweet-salty finish.
