This low-carb Cashew Cookie Dough Log delivers over 200g of protein per batch, made clean with Bethany’s Pantry Digestive Support Protein – Vanilla, creamy Greek yogurt, and cashew butter.
It’s grain-free, gluten-free, keto-friendly, egg-free,and ready in minutes — no baking, no fuss, just pure cookie dough bliss that actually fuels your body.
Ingredients

2 cups Bethany’s Pantry Digestive Support Protein – Vanilla

2 cups plain Greek yogurt

½ cup raw cashew butter

1 cup water (adjust as needed)

Mini chocolate chips, to taste

Optional: sweetener of choice (coconut sugar optional to taste)
Directions
In a large bowl, mix Digestive Support Protein – Vanilla, Greek yogurt, and cashew butter until crumbly.
Add chocolate chips, then slowly pour in water while mixing until you get a thick, dough-like texture. If too dry → add more water (1 Tbsp at a time). If too wet → add a bit more protein powder.
Shape into a log, roll in parchment paper, and refrigerate or freeze until firm.
Slice and enjoy chilled, or grab a piece straight from the freezer for a protein-packed treat.
